Recently, Easy Sheet Pan Dinners caught my eye while making their rounds on Pinterest. If you haven’t tried making an easy sheet pan dinner yet, my Sausage and Veggie Sheet Pan Dinner is the perfect place to start!
Sometimes I just want to take the night off from cooking. Yeah, I know you feel that way too.
Recently, however, our family has been making a concerted effort to scale back out eating out expenses. That means finding simple, nutritious dinners that I can whip up quick, without expending much effort or mental energy. I can have all the vegetables cut in about 10 minutes and then the oven does the rest.
This Easy sheet pan dinner is also a great way to incorporate more vegetables into your diet and introduce your kids to new veggies. My middle son–our frustratingly picky eater–LOVED the brussel sprouts! He recently discovered cabbage and was intrigued that they were like baby cabbages. He’s not a fan of sweet potatoes, but this sheet pan dinner has so many great veggies in it that we knew he was still going to have a healthy meal even if he picked his way through his dinner.
Another great thing about this easy sheet pan dinner recipe is that you can customize it to your heart’s content. Know that no one in your family likes brussel sprouts? Just substitute them with broccoli, green beans, or whatever else you happen to have on hand.
To make this recipe Whole30 approved, make sure you select sausages without added sugar or preservatives. You’ll also want to ditch the red potatoes. While our family doesn’t do Whole30, we generally try to stay away from meats with added sugars and preservatives. Here is a great list of Whole30 approved sausage brands and varieties.
Don’t you just love how colorful this easy sheet pan dinner is? The flavor of the brussel sprouts, onion, sweet potatoes, and red potatoes compliment one another perfectly!
Like I mentioned before though, feel free to change this recipe up to suit your needs. I sometimes giggle that I write recipes on my blog because I, myself, hardly ever follow recipes. I take a look at something I think looks great, take note of the cook time and temperature, then throw in ingredients that I think smell good together. (I’m one of those weirdos you always see smelling the food as they cook! LOL) Likewise, altering the amounts of the ingredients won’t affect your outcome much, if any. Just make sure the veggies are soft when done and you’ll be just fine.
Note: the ingredient measurements reflect the amounts to feed our family of two adults and 3 children. Feel free to adjust your measurements to fit your family’s needs.

Veggie, Sweet Potato, and Sausage Easy Sheet Pan Dinner

Ingredients
- 2-3 Cups halved brussel sprouts
- 2 large sweet potatoes diced into 1/2 inch cubes
- 4 Cups red potatoes diced into 1/2 in cubes or baby red potatoes quartered
- 1 sweet onion chopped
- 6 preservative-free sausages sliced into rounds
- 4 tbsp avocado or olive oil
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp Montreal Chicken Seasoning (If doing the Whole30 version, use Mrs. Dash Original and salt to taste.)
- Dash salt
- Dash pepper
Instructions
- Preheat oven to 400°.
- Combine all ingredients in a large mixing bowl. Stir until vegetables and sausages are evenly coated with oil and spices.
- Spread evenly on 2 baking sheets, making sure that the veggies are not on top of one another.
- Bake for approximately 40 minutes (time may vary by oven), stirring and swapping the upper and lower baking sheets halfway through.
- Your sheet pan dinner is done when the potatoes and sweet potatoes are soft.
The seasoning in the sausages adds a wonderful bit of flavor to the whole meal, minimizing the amount of seasoning you need to add.
