Eat Smart Salad Kits – Protein and Vitamin Packed Goodness!

Oh, my gosh! My life is just go, Go, GO! these days. Sometimes it seems that I hardly have time to stop and catch my breath.

Get up. Get the kids breakfast. Get the 8 year old off to school (that’s a fun one because we bike to school). Shower. Get ready for the day. Get the 2 younger boys snacks. Clean up the house. Get the boys lunch. Walk the kindergartner to school. Put the toddler down for a nap. Blog work. Get the boys snacks and homework done. Make dinner. Get the kids into jammies, teeth brushed, and to bed. Take a breath and finish all the odds and ends of the day.

I’m not going to deny it. As much as I adore being a mom, the daily routine can be a little exhausting. Not only that, but with the difficult summer I had with moving, my husband starting a new job, and the boys being so sick for so long I’ve been suffering from adrenal fatigue.

Eating well is a big priority in my family. Unfortunately, I seem to have been on an “eating well hiatus” for the past few months. With my schedule so full everyday, I found myself either eating out, grabbing something super quick like a piece of toast, or just skipping lunch altogether. None of those options do a body good.

A few weeks ago, however, Eat Smart sent us some of their new chef-inspired Eat Smart Salad Kits to try out. I’m now totally hooked!

Eat Smart Salad Kits and Plant Powered Protein

I totally love the Eat Smart Plant Powered Protein Salads!!!

I was a little nervous upon opening it to see all the kale (I’m really not a big fan of it), and I wondered how the julienne broccoli stalks would taste, but my taste buds were nothing but pleased!  Every bite was so good! I didn’t have any problem with the kale–it was really mild tasting–and the dressing just tied all the flavors together.

My whole lunch dilemma is solved in these single serve salads. Everything you need for your salad is in your Eat Smart salad kit! The toppings, each individually packaged–depending on which variety you get, you might have edemame, corn, chia seeds, or sunflower seeds–the dressing, and the greens.

Eat Smart Plant Powered Protein Salad

Because I tend to skimp on lunch in the afternoon for the sake of getting things done, it was so nice to have everything right there in my little salad container. Each of the Eat Smart Plant Powered Protein salads has at least 11 grams of protein, making them a complete, balanced meal. These plant based protein salads are also great for those looking for an alternative to animal proteins. The salads are preservative free, and I was so impressed by how fresh everything was (thanks to the individual packaging).

The box packaging makes it easy to take these on-the-go. Just grab a fork and you can enjoy these in the car, at your kid’s soccer game, or on a nice relaxing picnic.

The Eat Smart Superfood Gourmet Vegetable Salad kits weren’t any less delicious. Like the boxed Plant Powered Protein salads, the Gourmet Vegetable salad kits come with individually packaged add-ins and dressing. Just pour it all in a bowl and you have yourself a gourmet salad.

The Eat Smart Salads were a big hit in our house. My mother-in-law and my husband loved them too! They are such a great option for my husband to take to work! So, now I’ve solved my lunch dilemma, but I’m afraid I’ve acquired a new dilemma…how to keep enough Eat Smart Salad kits stocked in our house! LOL

  3. I love salad kits like this. I have them for dinner when my husband will be working late.
  4. I just had a baby, I don't have time to cook. So convenience and easy to throw together is crucial for me right now. I absolutely love how easy these salad kits are and they would make the perfect lunches while I only have a few minutes between feedings for my new baby.
