Let’s just stop for a minute so we can all drool over that picture….

There are just two desserts I can eat to the point of regret (well, not regret of indulgence, just regretting the consequence). THIS is one of them. Once I start eating it I just. can’t. stop. I am obsessed with this Honey Cinnamon Caramel Corn! Oh, the crunch. It is killing me writing this and not having any to much on…I ate it all already.

The recipe is slightly time intensive, but super easy to make.  It doesn’t have any corn syrup in it (it does have brown sugar though so it isn’t free of refined sugar). Instead, honey does the trick.

This Honey Cinnamon Caramel Popcorn is such a versatile dessert that I find myself making it for holidays, dessert parties, any occasion I’m craving something absolutely delicious. I even made it for my boys’ Valentine’s Day treat this year. I put it into cute little treat bags and tied them each up with a bow. Mom score!

How to make caramel popcorn

The other thing I love about this honey cinnamon caramel corn is that it very allergy friendly (unless, of course, you have a rare corn allergy). My oldest is very allergic to nuts and peanuts and parties, potlucks, and parent-provided snacks at school are usually a little nerve wracking. Anyone who brings a treat like this to a party is instantly on my good side.

White Chocolate Drizzled, Cinnamon Caramel Popcorn

Ingredients

  • 12 cups popped popcorn. (approx 1/2 cup unpopped)
  • 1 cup brown sugar
  • 1 tbsp. cinnamon
  • 1/4 tsp salt
  • 1/4 cup honey (I used raw honey) If you like your popcorn heavily coated increase the honey to 1/3 cup.
  • 1/2 cup butter (real butter please)
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 2-4 oz white melting chocolate (I used Ghirardelli White Melting Wafers that I purchased at Sam's Club. I know you can get them at Walmart too.)

Instructions

  • Preheat your oven to 250° F.
  • Pop your popcorn, place in a large bowl, and set aside.
  • Combine your brown sugar, cinnamon, and salt in a medium capacity glass bowl. Mix well. Cube butter and put on top of sugar mixture. Pour your honey over the mixture and microwave on high for 30 seconds.
  • Stir well and then microwave for an additional 2 minutes. Remove, stir again, and microwave for a final 2 minutes.
  • Remove from the microwave and add in the baking soda and vanilla and stir. The mixture will foam up. This is your caramel sauce. Quickly, pour caramel mixture over the popcorn and stir well until the popcorn is well coated.
  • Spread the popcorn mixture onto a foil or parchment lined jelly roll pan.
  • Put it in the oven and bake for 30 minutes, stirring every 10 minutes.
  • Remove from the oven and spread out on a clean sheet of parchment or wax paper.
  • While the popcorn is cooling, melt your melting chocolate according the instructions on the package. Drizzle melted white chocolate over popcorn with a fork.
  • When popcorn is cooled and the chocolate is hardened, break into chunks.
  • Put on a movie or invite some friends over and ENJOY!
