Gluten-free Honey Lemon Bars

Movie nights are a big deal at our house. During the week my boys watch educational shows for their TV time, but on Wednesday and Friday, to break things up a bit, they get to have a movie night. They get to watch a full-length movie of their choice. We go all out with popcorn or a special treat.

Lately, the boys have been begging me to get Big Hero 6 when it comes out on DVD. Their dad took them to see it in the theaters, and they’ve been dying to watch it again. Little did they know that I picked up a Big Hero 6 Blu-Ray/DVD at Walmart on Tuesday!!!

Big hero 6 DVD Blu-ray and Digital at WalmartI found the Big Hero 6 Blu-Ray/DVD combo conveniently on an endcap in the middle of the Entertainment section of Walmart. I snagged the Walmart exclusive Big Hero 6 Blu-Ray/DVD combo pack because it has a free digital copy that I can download for the boys to watch on the go. Here are the details:

Your purchase of the Big Hero 6 Blu-Ray/DVD + Gift With Purchase Set includes a digital movie on Vudu while supplies last! Simply scan your receipt using the Savings Catcher in the Walmart app. Then look for a message on your phone or email. Now you can watch Big Hero 6 on any device!

As a side note, if you don’t have the Walmart savings catcher app, get it. It is seriously awesome! I’ve gotten so much cash back on my Walmart purchases with that app.  You can also pick up Big Hero 6 toys and branded merchandise at Walmart.com.

Back to our Big Hero 6 movie night. When I broke the news to the boys on Wednesday that I had a special surprise for them for their movie night, and told them I got them Big Hero 6, I was met with cheers of, “Yes! Mom, this is the BEST night ever!” “You’re the best mom!” Seriously, my kids are very complimentary when they’re excited.  They really got down to business with the compliments when I told them I was making them a special treat to go along with their movie night!

High on compliments I set to work baking a my Big Hero 6 inspired dessert. Tipping my hat to the coolest nerd at “nerd school”, I decided to make Gluten-free Honey Lemon Bars.

Meanwhile, the boys got their movie on…

Save RecipeSave Recipe

Ingredients

    For the Crust
  • 2 1/2 Tbsp coconut oil
  • 2 Tbsp brown sugar
  • 1 cup shredded coconut
  • 1/2 cup oat flour
  • pinch of salt
  • 1 egg white (save the yolk)
  • For the Filling
  • 3 eggs + 2 yolks
  • 1/3 cup honey
  • 1/3 cup lemon juice
  • 1Tbsp lemon zest
  • 1/3 cup oat flour
  • For the Topping
  • Approx 3/4 cup mini marshmallows

Instructions

  • Preheat oven to 350°.
  • Line a 9x5 loaf pan with parchment paper (this will make removing the cooked lemon bars much easier).
  • Melt the coconut oil in a medium sauce pan. Add brown sugar, shredded coconut, salt, and oat flour. Stir well, and remove from heat.
  • Mix in the egg white (save the yolk for later).
  • Pat the mixture onto the bottom of the loaf pan and press firmly down (I used the bottom of a measuring cup to help me flatten the mixture).
  • Bake for 10 minutes.
  • While the crust is baking, begin preparing the filling.
  • In a large bowl, with an electric mixer, beat the eggs and egg yolks together until frothy. Add all the remaining ingredients and beat for two additional minutes.
  • Pour the filling over the baked crust and bake for 19-23 minutes (until the center is set).
  • Remove lemon bars from the oven.
  • Set the oven to Broil.
  • Top the lemon bars with marshmallows and return to oven.
  • Broil approximately 2 minutes until the marshmallows are a light golden on top. You will need to stand and watch to make sure your marshmallows don't burn.
  • Remove from oven and let cool before serving.
  • Enjoy!

  1. This recipe looks absolutely delicious, I wish you had a widget or quick link to print it! I am going to copy it down anyway- they will be great for the Spring season potlucks. Okay, I might make them for our Big Hero 6 movie night too! #client
    • Hey Jenna, Thanks so much! There is actually a button to print the recipe. Look just to the right of the recipe title (right below the picture of the backs of my boys watching Big Hero 6) and you'll find the print button. Hope that helps!

Amy, are you the Amy who I taught with at Learning Dynamics? It looks like you except short hair. :) I found your site from the Dr. Seuss fun facts. Your site looks great! You and your family are darling.
  3. maryanne says
have you tried almond flour, or coconut flour with this? Sounds good but have no oat flour.
    • Hi Maryanne, I haven't used almond flour because my son and I are allergic. You could probably use either one with success. I'd be inclined to go with almond over coconut because the recipe is already so coconut heavy.
