Recently a friend recommended a recipe for an Italian Wonderpot and I was instantly hooked. It’s got the brains of slow cooker recipe but much quicker – and you don’t have to remember to put it in hours ahead of dinner time. As I prepared this meal for the umpteenth time, a Mexican version popped into my head.
Mmm…a Mexican Wonderpot recipe would be the perfect solution for those nights when I just need a good hearty dinner with a Mexican flare! Though, called a “Wonderpot” recipe, you don’t need an actual wonderpot to make this. Nope, all you need for this Mexican wonderpot recipe is a large pot. Well, that and your ingredients.

Mexican Wonderpot Recipe

Ingredients
- 4 cups chicken broth
- 2 Tbsp olive oil
- 12-14oz Penne
- 28 oz fire roasted tomatoes
- 1 can black beans
- 1 can sweet corn
- 1 green pepper
- 1 medium onion
- 4 cloves garlic
- ¼ tsp red pepper flakes
- 2 Tbsp Cilantro
- Salt and pepper to taste
- Shredded Cheese
- Sour Cream
Instructions
- Add four cups of vegetable broth to a large pot. Add Penne to the pot. Also add the canned tomatoes (undrained), olive oil, beans, onion (thinly sliced), garlic (thinly sliced), corn, green pepper, red pepper, and salt and pepper.
- Make sure the ingredients are submerged under the liquid, place a lid on top of the pot, and then turn the heat on to high.
- Allow the pot to come up to a full, rolling boil over high heat then remove the lid and turn the heat down to medium.
- Allow the pot to continue to boil over medium heat, without a lid, for 10-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed.
- Stir the pot every few minutes as it cooks to prevent the pasta from sticking to the bottom, but avoid over stirring which can cause the pasta to become sticky and mushy. The pot must be boiling the entire time.
- After the pasta is cooked, add cilantro. Sprinkle shredded cheese on top and a spoonful of sour cream
