Mango Salsa, oh how I love thee. Okay, so I’m not really a fan of plain mango, but mango salsa is absolutely to die for! There is something about the mingling of mango, cilantro, and onion that gets my taste buds singing. Hopefully, this mango salsa recipe will have your taste buds singing too!
If you keep up with my recipes you’ve likely seen this mango salsa before. It has previously adorned a very tasty Jamaican Jerk Chicken recipe. Like the Jamaican Jerk Chicken, this mango salsa recipe also has its origins in The Looneyspoons Collection cookbook. Simple, fresh, and very healthy, mango salsa is one of those treats that you can feel proud of yourself for indulging in.
This mango salsa is divine on the Jamaican Jerk Chicken, but there is so much more that you can pair this with. Put atop your favorite grilled fish and you have a savory sweet and very healthful meal. Use as a dip for tortilla chips for a solo snack or as a party pleasing appetizer for your guests. With a super quick prep time this Mango Salsa recipe can be a lifesaver when you’re looking for an addition to your meal.
Ingredients
- 1 large mango, peeled and diced
- 1/2 cup minced red bell pepper
- 1 Jalapeno Pepper, seeded and minced (optional)
- 2 tbsp lime juice
- 3 tbsp minced fresh cilantro
- 2 tsp sugar
- 1/4 tsp ground cumin
- 1/8 tsp salt
- 1 tsp olive or grapeseed oil
Instructions
- Combine and mix all ingredients in a medium size bowl.
- Let stand at room temperature for 30 minutes before serving.
For Paleo-friendly Mango Salsa simply leave out the 2 tsp of sugar.
This salsa will keep for a few days in your fridge, but, chances are, it will be gone before it ever has time to go bad.
