Taquitos with Avocado Lime Dip

Yep. That’s me.  I love game time get togethers for one delicious reason: the food.  While I have several girl friends who really get into the game, I could take it or leave it.  For me the saving grace of having the television tuned in to sports for hours on end is freedom to stuff my face with *ehem* snack on delicious “munchies” all day long and have it be totally acceptable.

If you want to really impress your friends and family you can pair some delicious taquitos with an equally scrumptious dip like this Avocado Lime Dip recipe I created.

Avocado Lime Dip Recipe

This dip is a heavenly pairing of cilantro, avocado, and lime.  The fusion of cheesy (slightly spicy) taquitos with this creamy, zesty Avocado Lime Dip recipe is absolutely perfect.

Like I mentioned before, my two older boys are very picky eaters, and when they continued to ask for more Avocado Lime dip for three days after I made it, I knew I had created something wonderful.

The recipe itself is so easy to make.  Gather your ingredients and head to your food processor or blender.

Battered Taquitos with Avocado Lime Dip Recipe

Ingredients

  • 1 box Taquitos (optional)
  • 2 ripe avocados
  • 1 cup fresh cilantro
  • 1 cup ranch dressing
  • 1 1/3 Tbsp. lime (You're welcome to use fresh lime. I never have any on hand so I use bottled lime juice)
  • 2 Tbsp. heavy whipping cream
  • 1/8 tsp salt

Instructions

  • Preheat oven and cook taquitos according to directions on the box.
  • While taquitos are cooking combine the dip ingredients in your blender or food processor. Pulse several times until the dip reaches your desired consistency.
  • Scoop into a serving bowl, put your taquitos on a serving platter and let your guests enjoy!
