Quick and Easy 3 Ingredient Chocolate Chip Cookies Recipe

When I was growing up I loved coming home from school and having an after school snack. Snacks ranged anywhere from fresh fruit, a piece of bread, or my all time favorite, cookies! And once I got older I loved to bake cookies and try out new recipes.

Now flash forward 15 (or so) years and my oldest is in school. She always comes home from school and asks for a snack before she starts her homework or goes off to her dance classes.  I realized recently that I don’t bake like I used to. My biggest set back has been my children’s allergies. They are allergic to eggs and it is so hard to bake with out eggs! But I have decided that I can’t let that hold me back any more. So I found this recipe that calls for only 3 ingredients! I always have these things in my fridge and pantry so making these quick and easy cookies is ideal for when I am short on time or energy. I mean, who wants to stand in the kitchen baking all morning when you have to turn around and make dinner! 🙂 Here is what you will need…

How quick and easy! Plus they are seriously so yummy! (perhaps not the most nutritious, but yummy nonetheless!)

And now here is the recipe!

Ingredients

  • 1 box Yellow Cake Mix
  • 1 cup Melted Butter
  • 1 cup Chocolate Chips (optional)

Instructions

  • Melt butter and add it to the cake mix.
  • Mix it tell it's all combined.
  • Fold in the chocolate chips.
  • Scoop onto an ungreased cookie sheet and bake at 350 for 12-15 minutes
  • makes about 2 dozen cookies
  • Tips:
  • Since its a cake mix they don't really turn brown unless they get too done. So take them out before the turn brown. They will be a little soft so let them cool on the cookie sheet for a couple minutes before taking them off.

These yummy quick and easy cookies are perfect for when you are short on time and need to take a quick treat to a party or get together.  Plus if you buy a cake mix that does not contain eggs they are perfect for anyone with an egg, peanut or tree nut allergy. *Note: severely peanut and nut allergic people may need to try a brand of chocolate chips that don’t have a risk of cross contamination. We really like the Enjoy Life chocolate chips.

    These are absolutely the easiest cookie recipe that I have ever seen. I like to make these and have them as a dessert with ice cream. They look delicious.

    This is simply genius! You don't even know the amount if times I was in the middle of better a better or dough together and realized I don't have any eggs left.
    • Haha, we're always running out of eggs, too. Cake mix cookies are wonderful because they are so quick and easy. The fact they come out perfect almost every time is an added bonus! :)
