A few weeks ago we took the kids berry picking at Blueberry Hill farm here in Louisiana. Since then we’ve been experimenting, making lots of yummy treats with the 11 lbs of berries we picked. The kids and I absolutely love this berry popsicles recipe we’ve come up with!
One of our great successes was our fresh berry popsicles recipe! They may not look like much, but they are loaded with vitamins, antioxidants, and fiber. These berry popsicles are the perfect healthy treat for a hot afternoon.
If you don’t have a u-pick berry farm near you, simply substitute store-bought frozen berries.
Ingredients
- 5 cups Berries (I used blackberries and blueberries -- Just keep in mind that blackberries are very seedy. My kids don't mind the seeds.) You can use fresh or frozen berries.
- 1 Tbsp Lemon Juice
- 2 Tbsp Honey (alternately, a squirt or two of Stevia works great)
- 1 cup V8-Fusion or fresh veggie juice (optional--great if you want to add just a bit of vegetables to the popsicles)
Instructions
- Put the berries and lemon juice (and V8-Fusion if you're using it) in a food processor or high powered blender and blend until smooth.
- Add in the honey and stir.
- Pour mixture in popsicle molds.
- Freeze for a minimum of 6 hours.
