I love soup. Especially in the winter time. I love how it just warms me to the bones and it is such a comfort food for me. And this potato soup recipe is one of my favorites. It is just so creamy and delicious and my husband and kids just devour it! So I thought with winter in full swing I would share this yummy recipe. Here it is!
Ingredients
- 1/2 cup margarine
- 1/2 cup flour
- 8 cups milk
- 1 lb velvetta type cheese
- 9-10 potatoes (cooked, peeled and cubed)
- 1 pkg frozen broccoli
Instructions
- Cook, peel and cube your potatos
- Cook and prepare frozen broccoli
- Then in large pot melt butter and stir in flour
- Gradually add 8 cups milk (I used 2% and it made it really creamy and thick but it works with any type.)
- Cook over med heat til thick-stirring constantly
- Add Velveeta cheese and stir tell smooth
- Add potatoes
- Drain the broccoli and then add to soup
- Cook on low til blended and add salt and pepper to taste
- Do not over cook as potatoes will get a grainy texture
