Creamy Potato Soup

I love soup. Especially in the winter time. I love how it just warms me to the bones and it is such a comfort food for me. And this potato soup recipe is one of my favorites. It is just so creamy and delicious and my husband and kids just devour it! So I thought with winter in full swing I would share this yummy recipe. Here it is!

Ingredients

  • 1/2 cup margarine
  • 1/2 cup flour
  • 8 cups milk
  • 1 lb velvetta type cheese
  • 9-10 potatoes (cooked, peeled and cubed)
  • 1 pkg frozen broccoli

Instructions

  • Cook, peel and cube your potatos
  • Cook and prepare frozen broccoli
  • Then in large pot melt butter and stir in flour
  • Gradually add 8 cups milk (I used 2% and it made it really creamy and thick but it works with any type.)
  • Cook over med heat til thick-stirring constantly
  • Add Velveeta cheese and stir tell smooth
  • Add potatoes
  • Drain the broccoli and then add to soup
  • Cook on low til blended and add salt and pepper to taste
  • Do not over cook as potatoes will get a grainy texture

    This looks really good and I'm glad it doesn't have a lot of ingredients. So many recipes have so many ingredients it makes it really expensive to make it.

  8. Today would have been the perfect day for that soup! It poured buckets and the wind howled .... I just wanted to climb under a blanket in front of the fire and eat hot yummy soup! Darn work got in the way of those plans!

    Everyone around here has either a cold or the flu or just a case of the Winter Blues... So since this sound like a quick and easy comfort food recipe - I tried making it - and it was quite good! I did make a couple of changes - the main one being that instead of using frozen broccoli - I used a bag of (combo) broccoli and cauliflower florets AND also I did have enough milk so I substituted canned evaporated low fat milk - to my surprise it worked really well. And finally, since I also didn't have quite enough Velveeta cheese - I also used some grated GOUDA (!!!) cheese! The result was delcious and everyone LOVED it - including me (the most fussy eater among us...) Lol :- ) Thanks!

  15. I actually just made my first homemade potato soup a few days ago and it was a huge hit in our house! I wanted to add broccoli but didnt and now that I see your pic I am making it tomorrow.
