How about a yummy Super Bowl treat? This delicious cinnamon caramel corn would also make a wonderful treat for your special valentine.
The preparation process is easy but moderately time intensive. I prefer making this in the evening, after the boys are in bed. And, let me tell you, the time you put into making this caramel corn is beyond worth it. Once you start eating this stuff you won’t be able to stop.
Oh, and did I mention that this Caramel Corn is all natural? Yep! It is! The trick is to find all natural almond bark. If you live in Texas, you’re in luck as you can just hit up HEB. The HEB brand almond bark has no artificial ingredients. If you can’t find any all natural stuff, the other, though not as yummy, will do fine.
So, here is the recipe. I have a cool new gadget that will allow you to print the recipe straight from this post! Yay!
Ingredients
- 12 C Popped Popcorn (about 1/2 cup kernels)
- 1 C Brown Sugar
- 3/4 tsp. Cinnamon
- 1/2 tsp. Baking Soda
- 1 tsp. Vanilla
- 1/4 tsp. Salt
- 1/4 Cup Honey
- 1 Stick (1/2 Cup) Real Butter
- 3 oz (2 1/2 squares) Almond Bark
Instructions
- Preheat oven to 250 degrees.
- Place popped popcorn in a large bowl and set aside.
- Combine brown sugar, cinnamon, and salt in a microwave safe bowl. Mix well. Cut butter into chunks and put into the bowl. Pour honey on top. Microwave on high for 30 seconds and then stir to combine. Then microwave for another 2 minutes. Remove and stir. Return to the microwave and heat for 2 minutes more.
- Remove from the microwave and add vanilla and baking soda. Stir. The mixture will foam and rise slightly. Pour caramel mixture over popcorn and stir well until the popcorn is well coated.
- Spread popcorn onto a foil lined (for easy clean-up) jelly roll pan. Place in the oven and bake for 30 minutes, stirring every 10 minutes.
- Remove from oven and spread out on a large piece of foil or wax paper.
- Melt almond bark by microwaving on 50% power stirring every 30 seconds until fully melted. Drizzle over popcorn mixture. When almond bark is hardened and popcorn is cool, break into chunks and enjoy!
Notes
For an all natural recipe, look for almond bark made with natural ingredients. If you are more for throwing caution to the wind, you can substitute Karo syrup for the honey.
