I started cooking for my family at the relatively early age of 15. I learned quickly how to cook for a lot of people (10 kids and 2 adults) with few ingredients. My family had a some financial troubles during certain periods of my youth and there wasn’t always a lot in the cupboards or fridge to use when cooking. Cooking can be a fun challenge when you have little to work with. The recipe below was one of my favorite things to make. Canned beans and tomatoes are things most people usually have on hand. Beyond those two things the ingredients are few and substitutions can easily be made if you are lacking something.
Another thing I love about this recipe is that it is sooo mom friendly. It is packed with protein and other essential vitamins and nutrients. At about 10 minutes, the prep time is minimal. The leftovers are just as good, if not better, than the first time you eat it.
Recipe:
1 Can of Chicken Breast–drained
1/2 Small onion
2 Tbsp. Chili Powder
1 Tsp. Cumin
1/2 Tsp. Onion Powder
1 15 oz. Can Pork and Beans
2 15 oz. Cans other Beans (great northern, kidney, black, etc.)–drained and rinsed
1 15 oz. Can Red Gold Chili Ready Tomatoes
1 15oz. can corn (frozen corn will do fine as well)
1/2 can water
Directions:
In a large pot, combine can of chicken breast with onion and spices. Cook on medium high for 2-3 minutes, stirring constantly. Add the remainder of the ingredients to the pot. Bring to a boil then reduce heat and simmer on medium low for 30-45 minutes. Top with shredded cheese and sour cream, and pair it with your favorite corn bread or chips for a complete dinner.
*This recipe is very versatile and makes a great base if you want to add other things. We’ve added things like zucchini and fresh green beans. You can leave out the chicken for a vegetarian chili. If you’re in the mood for a slightly sweeter chili use 2 cans of pork and beans and just one can of the “other” beans.
