Easy Thanksgiving Pilgrim’s Hat Cookie Treat

My husband’s little brother and his girlfriend made some really cute witch’s hat cookies around Halloween so I thought I could incorporate the idea into a Thanksgiving Hat.  It was so simple I couldn’t believe how quick and easy they turned out!  All you need to make them is:

  • Shortbread cookies (the circle cookies that have fudge stripes on one side)
  • Big marshmallows
  • Chocolate chips or melting chocolate
  • Yellow frosting

So this is what I did to make them.  First, I melted my chocolate.  I just did it in the microwave.  Make sure you check it about every 20 seconds and stir it so it doesn’t burn.  Also, chocolate is easier to melt in a double boiler if you have one of those.

Next, I lined a cookie sheet with tin foil just so the cookies wouldn’t stick.  And I just place all the cookies upside down.

Then, take the marshmallow and dip it in the chocolate.  I used the spoon to help cover all the sides.  You can carefully make touch ups after you place the marshmallow on the cookie.

Make sure you cover all the sides of the marshmallow. That way it will stick to the cookie. When you’re satisfied with the look of your hat put your cookie sheet in the refrigerator for 30 minutes to help the chocolate set quickly.

Then I made yellow icing using this excellent recipe, and just piped a square buckle on the cookie.

Tada!  All finished!

  3. I saw this recipe on Disney's Family Fun. :) Unfortunately me + melted chocolate never mix, haha. I think I'm going to try and make them into elf hats around Christmas with the striped Hershey's Kisses. :)
