I love guacamole! So do both my sons. Avocado and guacamole are very common foods in my house. They are full of vitamins, protein, healthy fats, and are so yummy. When I was a kid one of the places we lived had avocado trees. What a treat it was for us to always have fresh guacamole on hand!
Because guacamole is a year round treat for us, I thought it would be fitting to post a yummy “Spookamole” recipe. I combined a couple of my kids’ favorite foods for this recipe, sweet potatoes and guacamole! I don’t have the best camera, but here is a picture to give you an idea of how it could turn out.
Here is the recipe:
4-5 large Haas avocados
1/2 Teaspoon Salt (salt to taste)
1 1/2-2 Tbsp. lemon concentrate.
1 1/2 Tbsp. mayo
(optional) Cilantro
1 small bag of frozen Sweet Potato Fries (you can, of course, use fresh sweet potatoes, just make sure you cut them into fries and bake them before using.)
1 Can of Olives
1 clove of garlic
1/2 cup Sour Cream
Mash the avocado using a spoon, fork, or masher. Add remaining ingredients and stir.
Bake sweet potato fries according to directions on the bag. Pour olives into bowl. Slice the garlic clove in half lengthwise and put each half into an olive for the spider’s eyeballs. Put sour cream into a small zip lock bag and cut off the tip. Make a web design on a large platter. Arrange guacamole body, olive head, and sweet potato legs on the platter. Serve with the remaining sweet potato fries for dipping. Enjoy!
