Homemade Granola Trail Mix
We have a camping trip planned in a couple of weekends so I started looking for some new snack recipes. In the past we always have chex mix, trail mix or muddy buddy’s but since we found out our 18 month old is allergic to peanuts and almonds I needed a new snack recipe that he could eat. That’s when I found this recipe. It seemed like a really simple but tasty recipe so I wanted to try it.
1 – 1 1/2 cups brown sugar
1/2 cup water
1 tsp salt
2-4 tsp vanilla extract
8 cups old fashioned rolled oats (not instant)
2 cups nuts, seeds or dried fruit
Combine brown sugar and water and microwave for 5 minutes.
Then add salt and vanilla extract.
Pour over oats and stir.
Add nuts and seeds.
Once all mixed together line a cookie sheet with parchment paper and dump out granola mixture. You can create clumps by pinching some of the mixture together on the cookie sheet. Cook in oven at 275 degrees for 45 minutes to an hour. Cool and store in an airtight container.
I wanted to make it more like a trail mix so I added some extra fruit and some m&m’s once it was all cooled down.
All I can say about this trail mix was it was so good!!! I really liked it! I was surprised too that the kids enjoyed it as much as they did. Of course they picked out all the m&m’s and craisins first but they really enjoyed the granola too. This is definitely a great mix to put in individual baggies for camping and hiking. My husband enjoys it too. He takes a little bit to work each day to snack on. I’m glad I found this recipe. It was so easy to make and very delicious!
